The leek, Allium ampeloprasum, is a vegetable belonging to the genus Allium in the family Amaryllidaceae. Related to onion and garlic, it forms a long cylinder of bundled leaf sheaths instead of a bulb. The edible part is the blanched leaf base, which is produced by covering the plant with soil during growth. Leeks are hardy, easy to cultivate, and usually harvested in autumn.
