Zea mays, also called corn, is a major grain crop first domesticated by indigenous peoples of Mesoamerica in prehistoric times. The plant produces ears containing kernels that are widely used as food and starch. It is the most widely grown grain crop in the Americas, especially in the United States, where a large portion is used to produce ethanol. Through centuries of artificial selection, maize evolved from plants with small cobs to varieties that produce several larger cobs per plant.
